On the frontier with Rioja, in the town of Castejón, Luis Olarra has built the Pago San Gabriel winery, whose philosophy is to make and bottle wines that come exclusively from grapes grown in the winery’s own vineyards – where the vines have a high planting density and low yields. The vines are international varieties. Currently, the winery is made up of seven buildings surrounded by vines, with a total production capacity of 300,000 kilos. The winery markets the brand Zubiola.
Fermentación y Crianza : Tras cuatro días de maceración en frío, realizó la fermentación alcohólica en pequeños tanques, a temperatura controlada de hasta 29ºC, siendo remontado y bazuqueado dos veces al día.Posteriormente, se hizo la formación de vino
