CASTILLO DE MONJARDIN

In order to effect the production and ageing of Castillo de Monjardín wines, 4.000 m2 of cellars, at 12 metres below ground level, have been constructed in such a way that every cellar is built into the land at its north-side, guaranteeing constant levels of humidity and temperature. The split-level construction of the winery makes it possible to avoid the use of pumps which can affect the wines. The winery’s façade is reminiscent of the 17th century fortified palaces of Navarra. Castillo de Monjardín, established in 1988, takes its name from a fortification built in the 9th century built by Arabs, due to its strategic position on the Pilgrim’s Route to Santiago de Compostela.

Wine-making

Vendimia nocturna entre 8 y 10 grados. Fermentación lenta, a baja temperatura. Tras el desfangado, se traslada a barricas nuevas de roble hendido Allier para su fermentación, una media de 35 días. El vino permanece sobre sus propias lías hasta finales de febrero, cuando se trasiega a depósito.
